When farmers harvest corn, wheat, oats, rice, or sugar cane, they generate an underutilized sidestream of cobs, straw, and hulls. Supplant uses enzymes from fungi to upcycle this plant fiber into low-calorie, low-glycemic sugars. That means more of the material grown on farms can enter the food system, making agriculture more sustainable.
